El Jimador is a type of farmer originally from Mexico dedicated to harvest agave plants, mainly for the production of tequila, mezcal and Sotol. This task requires the ability to identify the mature agave (between 8 and 12 years). The immature agave may have a bitter or too sweet taste, ruining spirits made from it. The main tool of a Jimador is the coa jima or various types of sickle. The coa for Khimar is a flat blade knife on the end of a long pole that resembles a hoe. The coa is used to first remove the flower of the agave, which makes the central pineapple swell. Later, pineapple is harvested, using the same tool to cut all the outer leaves of the plant, leaving only the pulpy center then cut and baked in preparation for the production of mezcal or tequila
